Our eleven mountain restaurants, each with a different culinary direction, all have one thing in common: their attitude towards using fresh, local ingredients. We source fresh ingredients from farmers and producers every day and use them to conjure up our homemade dishes - during both the summer and the winter.

Things that Represent the delectation in the Silvretta Montafon

Meat products

We work closely with farmers in Montafon and are willing to pay more for high-quality meat. Before each winter season, we buy whole animals from farmers in the region and have them slaughtered and processed in the Salzgeber butcher's shop in Tschagguns. Not only our guests appreciate the regional meat purchase, it also saves CO2 compared to buying from wholesalers.

Dairy products

Cheese and dairy products (except for homogenised milk and coffee cream) are obtained from the companionship "Vorarlberg Milch" located in Feldkirch, which works together solely with farmers in Vorarlberg. For our mountain breakfast in summer we use products from surrounding alps.

Regionality

Our beer comes from the brewery Fohrenburg located in Bludenz. Jam, juices and herb mixtures are produced by the team of the Nova Stoba. We also offer delicious dishes for vegetarians and vegans in our restaurants! Please let us know if you have special wishes!

Throw away food?

We are against it and therefore we sometimes also process products that have passed the printed best-before date. Our chef controls them very carefully for their quality and ensures that we do not waste any food.

Bread, water and wine: foundations of life

Bread with principles

It can only be bent once it has been sliced. You can, of course, also break it. There is only one thing that this bread does not come with: a pre-formed shape. Natural bread. Austria has a bread culture like no other: few other countries can boast such a diverse range of fresh bread and pastries. We want to spoil you with something really special: bread from Joseph Brot, which is made from 100% organic Austrian ingredients. It is produced with the quality associated with traditional craftsmanship – hand kneaded, naturally risen, double-baked in a steam oven and allowed to stand for one day on the bakery shelf. This bread is free from additives and therefore forms part of a healthy, balanced diet. Choose from our range of vegan, lactose-free, yeast-free and wheat-free breads, as well as wholewheat breads!

Wine

Delicious, freshly cooked food and a nice glass of wine are the perfect way to top off an action-packed day in the mountains. Since this winter season, an extra-classy wine bar has been waiting for you at Nova Stoba, more than 2,000 meters above sea level. Alongside the tantalizing selection of Austrian and international wines, we will also serve you homemade lemonade, the finest barista coffee and selected craft beers. Can we have some “Alpine tapas” with that?

OVA

Rhaeto-Romanic. Fresh spring water. From the Montafon mountains. Still, sparkling or flavored. Flavors available depending on the weather and the time of year are ginger, lemon, orange, lemon balm or berry. Combined in a specially designed carafe. Refreshing. Natural. Genuine. OVA.

Am 15. Januar, 04. Februar und 19. März stellen die Weingüter Fritsch, Dürnberg und Schwarz sowie Dr. Heger ihre besten Tropfen vor. Das VINNOVA-Team kredenzt dir zum jeweiligen Wein eine Speise, die das Geschmackserlebnis perfekt macht.
