With the following recipe, you can enjoy a fluffy piece of holiday happiness whenever you feel like it. And if you want to taste the original version from Vorarlberg, you know where to find it …
Stoba 7’s famous Kaiserschmarren
Ingredients: 4 eggs, 100 g sugar, 1 tsp vanilla sugar, 40 g of extra coarse flour and 40 g of all-purpose flour, 140 ml milk, 1 pinch of salt
Preparation:
- Separate the eggs.
- At medium speed, beat the egg whites with a mixer until they turn white.
- Gradually beat in half of the sugar until stiff peaks form on the creamy surface.
- Stir the remaining ingredients with a whisk until smooth.
- Fold in the beaten egg whites.
- Pour the mixture into a hot, greased, ovenproof pan.
- If desired, sprinkle raisins on top; Bake at 70 °C in a preheated oven for about 20 minutes.
- Remove the pan from the oven, pour its contents onto a large, flat plate and tear them into equal-sized pieces with two spoons.
- Sprinkle sugar over it and caramelise it.
- Pour a shot of 40 % rum over the cut-up pancakes and flambé them.
- Serve with homemade plum compote or apple sauce.
